.25oz Polaris Pellet Hops (18.4%) First Wort
.7oz Chinook Pellet Hops (9.9%) 15 min
.7oz Centennial Pellet Hops (10.2%) Whirlpool
.7oz Chinook Pellet Hops (9.9%) Whirlpool
California Ale Yeast
1oz Cascade Pellet Hops (6.3%) Dry Hop
.75oz Centennial Pellet Hops (8.4%) Dry Hop
.35oz Chinook Pellet Hops (11.9%) Dry Hop
.35oz Columbus Pellet Hops (11.6%) Dry Hop

 

DIRECTIONS
Mash grains at 154°F for 60 minutes.
Follow boil schedule adding ingredients as designated.
Pitch yeast at 65°F and let ferment until terminal gravity is reached.
Transfer to secondary at 68°F, add dry hop additions and let set for 5 days.
Bottle/Keg and enjoy!

Ferment at 65° F until Terminal Gravity is reached.
Transfer to secondary and allow to rest at 68°F for 1 week.

Barleywine

1.0 oz (28 g) pellet Nugget hops, 13% alpha acid (60 min)
1.0 oz (28 g) pellet Centennial hops, 10.5% alpha acid (60 min)
1.0 oz (28 g) pellet Centennial hops, 10.5% alpha acid (30 min)
2.0 oz (56 g) pellet Cascade hops, 4.4% alpha acid (15 min)
2.0 oz (56 g) pellet Cascade hops, 4.4% alpha acid (10 min)

DIRECTIONS
Mash grains at 150-152°F (66-67°C) for 60 minutes.

Transfer to secondary and let sit at 67°F (19°C) for at least four weeks.
You may have to add a little fresh dry yeast at bottling to help bottle condition.

Amber Ale

Makes 3 U.S. gallons (or 11.4 L)

INGREDIENTS 
2 lb (0.91 kg) Pilsner dry malt extract
1.5 lb (0.23 kg) Pale dry malt extract
11 oz (0.32 g) Crystal 40 malt
11 oz (0.32 g) Crystal 80 malt
1 oz (28 g) Nugget hops (60 minutes)
0.5 oz (14 g) Amarillo hops (15 min)
0.5 oz (14 g) East Kent Goldings hops (whirlpool)
2.5 oz (71 g) corn sugar (for bottling)
1 packet dry ale yeast (ex: Lallemand Nottingham yeast)

DIRECTIONS
Steep the grains at 160° F (71° C) for 30 minutes. Conduct a 60 minute boil, following the hop additions as listed in the ingredients. Remember, hops are listed in the time from the end of the boil! Ferment at the temperature called for by your yeast. With the Nottingham yeast, 68-70°F (20-21° C) is a good target. When fermentation is complete, bottle with the corn sugar for carbonation. If kegging, force carbonate.
